This wine was made by all the members for a competition.APRICOT AND ORANGE WINE
Ingredients for 1 gallon of dry white wine
1/2 lb. dried apricots
1 litre white grape juice
1 litre orange juice
1 1/2 lb. sugar
1 1/2 teaspoons tartaric acid
1 teaspoon pectolase
1 teaspoon yeast nutrient

Wash the dried apricots in cold water to remove the preservative, cut into small pieces, cover with hot water and leave overnight. The following day, simmer for 15 - 20 minutes then strain.
Make the apricot liquid up to 2 litres with cold water and put into a fermentation bucket with the orange juice, grape juice, sugar, acid, pectolase and nutrient. Stir to dissolve the sugar and add the yeast. Stir daily for 4 days.
Transfer to demi john under airlock after 4 days.
Rack when fermentation ceases and again 1 month later, adding a campden tablet.
